This Thai Coconut Chicken Red Curry is made using red Thai curry paste, coconut milk, chicken breast and a mixture of different root vegetables.  Served with a side of rice, a lime wedge and topped with fresh cilantro, this meal has loads of flavor and reheats extremely well.


Chicken breast, green peppers, green onions, carrots, sweet potatoes, red Thai curry paste, light coconut milk, cumin, ginger, garlic, brown sugar, peanut butter, lime juice, chicken broth, cornstarch, dry roasted peanuts, avocado oil, Jasmine rice, lime and cilantro.
